I recently par-boiled string beans from my garden to freeze. I would like to save the stock. Does anyone have a canning recipe or will storing it in the fridge work? How long does it keep for? I'd appreciate your input.

You could freeze it if you really wanted to save it. -- Chris Behrens Pendleton, SC, USA USDA Cold Zone 7/AHS Heat Zone 7 Send me email, not PM's

i save chicken stock in the freezer......just pour into a loaf pan...freeze...then set pan in a sink of hot water to loosen...then place in a food saver bag..... cook rice and pasta in that instead of plain water....or soup etc.... love my food saver!!!!

If you put the bag in the pan and then filled the bag, it would freeze inside the bag in the right shape and you wouldn't have to thaw it to get it out of the pan before bagging. Right? Or am I over simplifying it? -- Chris Behrens Pendleton, SC, USA USDA Cold Zone 7/AHS Heat Zone 7 Send me email, not PM's

If you can save a large empty plastic soda bottle that has been washed out, place a funnel over the top, and pour your heated liquids into it, and if you have debris you can use a strainer or a clean piece of cheesecloth or even gauze made from cotton. Just pour to half full so when you freeze any liquid it won't freeze over through the top. Cover the top with the cap, and freeze the bootle of liquids. You can save leftover coffee too, and it is great for Vichysoise (cold soup) and you preserve the vitamins within the broth as well.
